Now that summer is approaching I think no bake recipes are really great alternatives to stay away from the oven. Two weeks ago my aunt introduced me to Energy Bites and they were the most delicious little snacks I've ever had. They were tasteful, light and the perfect size for portion control. Think of them as bite sized granola bars - the perfect ratio of sweet and healthy. If you have a sweet tooth like I do then the Energy Bites will not disappoint. The chocolate chips add a savory flavor to satisfy that need. They're also considerably healthy snacks so, you don't have to feel guilty as you would eating a chocolate chip cookie. lol I like that they're really simple to make and convenient lunch snacks. I actually ended up making a couple of batches for my cousin's end of the year party at school (I told her she had to steer away from the basic fruit salads everyone usually takes to those types of parties lol) and apparently they were a hit because her classmates ate them all. After hearing that feedback I figured I had to share the complete recipe with you guys!

No Bake Energy Bites Recipe

Ingredients:

1 cup Old Fashioned Organic Oats

1/2 cup Creamy No Stir Organic Peanut Butter or Almond Butter (MaraNartha is a good brand)

1/2 Cup Organic chocolate chips

1/3 Cup Organic Raw Honey

1/4 cup Ground Flaxseed (Golden Roasted Milled Flaxseed with Blueberries)

I was able to purchase some of these products at Trader Joe's but, what I love about this recipe is the fact that you can alter it to your liking and experiment with different butters, chocolate chips, flax seeds or even substitute the honey for agave. You can even make them vegan by purchasing vegan chocolate chips.

Directions:

In a large bowl, mix all the ingredients together then roll out teaspoon sized balls and place them on a baking sheet covered with wax paper. Freeze them for about an hour. Take them out and enjoy!

Tip: Keep leftovers in the refrigerator or freezer in a Ziploc bag or tupperware.

Let's save some energy by keeping that "No Bake" movement in tack this summer!

I hope you all enjoy this recipe and snack as much as I do and don't forget to let me know if you did by clicking the heart button below and adding your comments!

XOXO,

Gabrielle

Protein Pancakes Recipe

Protein Pancakes have been my go-to my morning protein or that late night sweet tooth. I replace syrup with organic raw honey to keep it as healthy as possible but, feel free to use syrup!

Protein Pancake Recipe:

Ingredients:

- 1-2 scoops Vanilla Protein Powder of your choice (I usually mix Whey Factors unflavored or vanilla powder with Trader Joes Hemp Vanilla protein powder)

- 1 large egg

- splash of almond breeze

- 1 banana

- 1 tablespoon baking powder

- a dash of cinnamon

- 1-2 drops of vanilla extract

Directions:

- Mix protein powder, eggs, almond milk, baking powder together

- Add your banana, smash with fork into mixture

- add cinnamon and vanilla extract to your liking

- Heat a greased griddle or frying pan on medium heat and por about 2.5 inch wide puddle of batter

- Flip pancake once the batter begins to bubble or browns.

Recipe should call for about 3-5 pancakes. And just a heads up, they are a lot thiner than regular pancakes. lol Feel free to top your pancakes with honey, syrup, and or fruit! :)
